Ingredients
- 400 g. of pumpkin puree
- 300 g. wheat flour
- 220 g. sugar
- 4 eggs size L
- 1 sachet baking powder (16 g.)
- 125 ml. sunflower oil
- 65 g. chopped walnuts
- 1/4 teaspoon cinnamon
- 1/4 teaspoon of powdered ginger
- 1/4 teaspoon salt
- Powdered sugar for decoration
How To Make It
Step 1:
We begin the preparation of our pumpkin cake, for this, in a bowl add the flour, baking powder, salt, ginger, cinnamon and mix well.
Step 2:
In a bowl and with the help of an electric mixer, add the eggs, sugar and beat until the volume triples, then add the oil and continue beating, then add the pumpkin puree and integrate very well.
Step 3:
Add the flour mixture that we had reserved in two parts and continue beating, when the flour mixture has been integrated, add the chopped walnuts and with the help of a spatula stir.
Step 4:
In a floured tart pan, add our pumpkin cake mixture and bake it in the oven for 40 to 45 minutes at 170 ºC / 338 °F (heat up and down and fan, place the pumpkin cake in the middle).
Step 5:
Remove our cake from the oven and let it cool for a few minutes (10 - 15 min) then unmold and let it cool completely on racks, when it has cooled, add the powdered sugar on top and we have our delicious pumpkin cake ready.
Tips To Prepare It
To make the pumpkin puree, remove the skin from the pumpkin, cut it into cubes and bake it in the oven for 1 hour and 30 minutes at 200 ºC / 392 °F covered in aluminum foil) then with the help of a fork, mash the pumpkin into a puree.
