This time we prepare a quinoa salad, a fresh and light option, perfect to eat in hot weather or at any time of the year, it is a dish that we can enjoy as a starter, as a main dish or as a side dish for chicken or fish, among others. Ingredients
- 100 g (3.5 oz/ 0.22 lb) quinoa
- 50 g (1.76 oz / 0.11 lb) sweet corn
- 1 carrot cut in cubes
- 10 cherry tomatoes cut in quarters
- 10 black olives cut into rounds
- 1 avocado cut into chunks
- 1 teaspoon of sherry vinegar
- 200 ml (3.4 oz) water
- 1 tablespoon olive oil
- Salt to taste
How To Make It
Step 1: We begin the preparation of our quinoa salad, for this, in a pot over medium heat, add water, salt and let it boil, once it is boiling add the quinoa, cover the pot, let it cook for 15 minutes over low heat, after this time, remove from heat and let it cool.
Step 2: In a bowl add the quinoa, then add the tomato, carrot, corn, olives, avocado, stir until all ingredients are fully integrated, then add a little olive oil, vinegar, salt, stir again and we have ready our delicious salad.
Tips To Prepare It
To prepare quinoa salad there is no exact rule, we can add the ingredients we like the most, among them we can mention cherry tomatoes, black olives, carrots, sweet corn and avocado as in the case of this recipe, but we can also add ingredients such as feta cheese, cucumber, beans, strawberries or whatever we want.
As for how to dress the quinoa salad we can do it with olive oil and vinegar, it can be wine, sherry, apple, among others or if we want we can also add some pepper, lemon, honey or our favorite dressing.
