Ingredients
- 200 g. strawberries or strawberry quarters (without the leaves)
- 200 ml. of whipping cream (minimum 35% fat) must be cold.
- 75 g. white sugar
- Juice of half a lemon
- 2 sheets of neutral gelatine
- Grated white chocolate for decoration (optional)
How To Make It
Step 1: We begin the preparation of our strawberry mousse by adding cold water in a bowl and then adding the sheets of neutral gelatin and leaving them to hydrate for 10 minutes.
Step 2: In the glass of the hand blender, add the lemon juice, the strawberries, the sugar and blend very well (this step can be done in a hand blender or in a traditional blender). Once it is perfectly blended, take a bowl and reserve only a part of the mixture to be used to dilute the gelatin.
Step 3: Take the mixture to the microwave (the small part we reserved to dilute the gelatin) and heat it for a few seconds without boiling, then remove the neutral gelatin sheets from the bowl where they were hydrating, drain them very well and add them to the strawberry mixture, stir well until the gelatin is perfectly integrated, then add this mixture to the rest of the strawberry mixture, stir and reserve in the refrigerator.
Step 4: Now we are going to whip the cream, to do this, in a bowl add the cream (it is important that it is very cold, both the cream and the bowl where we are going to whip) and with the help of an electric whisk, begin to whip until the cream is whipped, this step will take a few minutes, do not despair, as soon as you see that the cream forms grooves and peaks, you have it ready.
Step 5: Add the strawberry mixture to the whipped cream and with the help of a spatula, we are going to integrate little by little and with wrapping movements until everything is unified (it is important to do this step little by little and with wrapping movements, so that the cream does not lose its texture).
Step 6: Divide the strawberry mousse into containers and place in the refrigerator for a minimum of 6 hours or until the mousse has set perfectly (covered with plastic wrap). After the time in the refrigerator, we remove our mousse, to decorate add a strawberry (optional) grated white chocolate and we have our delicious strawberry mousse ready.
Tips To Prepare It
It is important that the strawberry mousse be kept in the refrigerator for the indicated time, so that it sets perfectly.
For this strawberry mousse recipe, we must use whipping cream with a minimum of 35% fat.
For this recipe we use neutral gelatine in sheets, but you can also use neutral gelatine powder (3.5 g).
The whipping cream must be very cold, also the bowl where you are going to whip it, so I recommend to put it in the freezer at least 15 minutes before whipping the cream.
The part of the strawberry mixture that we set aside to dilute the gelatin, should be heated a little in the microwave, just a little, it can not boil.
You can blend the strawberry mixture either in a hand blender or in a traditional blender.
When you take the mousse to the refrigerator, cover it with plastic wrap.
When integrating the strawberry mixture with the whipped cream, use a spatula and integrate little by little and with enveloping movements, so that the cream does not drop and lose its texture.
