There are many recipes with chicken, all very simple and easy to prepare, but today we will teach you how to prepare a very typical dish of Colombian cuisine, it is the chicken sudado or also known as chicken sudado, basically consists of a chicken stew, where apart from the chicken other vegetables are used to provide much more flavor and make a more complete dish, it is usually accompanied with white rice.
Ingredients
- 8 pieces of chicken thigh
- 1 red bell pepper cut into small squares
- 1 large onion cut into small squares
- 1 garlic clove, chopped
- 3 potatoes cut into chunks
- 2 carrots cut into rounds
- 250 ml (8.5 oz) crushed natural tomatoes
- 250 ml (8.5 oz) water
- 1/2 teaspoon cumin powder
- Chopped fresh coriander for garnish
- Salt and pepper to taste
- Olive oil
How To Make It
Step 1: To start preparing our pollo sudado, the first thing to do is to place our chicken pieces in a bowl and add the cumin, a little salt, a little pepper and with the help of our hands, stir to season all the chicken parts very well.
Step 2: In a pan over medium heat with a little olive oil, add the onion, garlic and cook for 3 minutes, then add the red bell pepper and cook for 4 minutes, add the crushed tomato, a little salt, stir and cook for 4 more minutes.
Step 3: Add the chicken pieces, the water and as soon as it starts to boil, cover the pan and cook for 20 minutes. After 20 minutes, add the potatoes and carrots, spread them around the casserole, cover again and cook for 20 minutes more or until the potatoes and carrots are well done.
Step 4: Serve the chicken pieces on a plate, add the sauce on top with the vegetables, then add some fresh coriander and all that is left is to enjoy this delicious chicken sudado.
Tips To Prepare It
To prepare pollo sudado, you can add the vegetables that you like the most, as well as you can season the chicken with your favorite spices.
We can use a chicken cut in pieces or we can use the whole pieces, this is the choice of each one, in this occasion we choose to use whole pieces.
