The tapenade is a paste or pate of black olives very typical of the French Provence, is one of those appetizers that we do not get tired of preparing because it is very easy to make and usually always delight everyone, is traditionally prepared in a mortar, crushing all the ingredients and thus obtaining a paste, but we can also prepare it using an electric grinder or a turmix, to make it faster and more practical, what is important, is not to crush the paste too much as it should look coarse.
The main ingredients are black olives, capers, anchovies and olive oil, although there are other versions where you can add garlic, herbs, tuna, balsamic vinegar, among others. Ingredients
- 130 g (4.6 oz) pitted black olives
- 12 g. (0.42 oz) anchovy fillets
- 20 g. (0.7 oz) of capers
- 70 ml. (2.4 oz or 5 tbsp) olive oil
How To Make It

Tips To Prepare It
For this tapenade recipe, you should use pitted black olives.
Use good quality anchovies for a better result.
It is important not to over-mash the tapenade, as it should have a coarse texture as shown in the videos.
You can keep the tapenade in an airtight glass container, it will keep perfectly for at least 10 days.
