Ingredients
- 500 g. mascarpone cheese
- Soletillas biscuits (the quantity will depend on the mold to be used)
- 1 cup of coffee
- 4 egg yolks (keep the egg whites)
- 160 g. sugar
- Powdered or grated chocolate
How To Make It
Step 1: We begin the preparation of our tiramisu, for this, in a bowl add the egg yolks, half the sugar and with the help of an electric mixer, beat until a homogeneous texture is obtained and the color is light yellow, then add the mascarpone cheese and continue mixing.
Step 2: On the other hand, in a bowl place the egg whites, the other half of the sugar and with the electric mixer beat until a firm texture is obtained, so much so that if you turn the bowl upside down, the mixture does not fall out.
Step 3: Then add it to the previous mixture and incorporate it with the help of a cat's tongue very slowly and delicately so as not to lose its texture and keep it fluffy.
Step 4: Dip the biscuits one by one in the coffee (at room temperature) on both sides and place them in a bowl to form the base of our tiramisu, when the bottom is already covered, add half of the cream, then repeat this process once more, place another layer of biscuits dipped in coffee, the other half of the cream and finally add the chocolate powder or grated chocolate until the entire surface is covered, cover with plastic wrap and take our tiramisu to the refrigerator for 4 hours.
Step 5: Remove the tiramisu from the refrigerator, serve and enjoy!
Tips To Prepare It
When dipping the tiramisu biscuits in the coffee, make sure the coffee is not hot and dip them quickly as they absorb the liquid very quickly.
For this tiramisu recipe, the eggs must be very fresh and at room temperature.
You can pasteurize the eggs if you wish.
For this tiramisu, you can use grated chocolate or chocolate powder.
