Ingredients
- 90 g. all-purpose flour
- 1 1/2 tablespoons baking powder
- 1 1/2 tablespoons vanilla extract
- 150 g. sugar
- 4 egg whites
- 4 egg yolks
- 397 g. condensed milk (1 can)
- 200 ml. of cooking cream or single cream
- 375 ml. evaporated milk
- 4 egg whites (for the meringue)
- 100 g. sugar (for the meringue)
- 200 g. sugar (for the syrup)
- 70 ml. water (for the syrup)
- Powdered cinnamon to decorate
How To Make It
Step 1:
We begin the preparation of our tres leches cake, to do this, in a bowl add the flour, baking powder, mix and set aside.
Step 2:
In the bowl of a mixer, add the egg whites and beat until whipped, then add the egg yolks (one at a time), the vanilla extract and continue beating, add the sugar and beat until blended.
Step 3:
Add the flour and yeast mixture and with the help of a spatula we integrate it little by little with wrapping movements, then in a baking dish (floured with butter and flour) pour the mixture and take our cake in the oven at 175 ° C / 347 ° F between 45 and 50 minutes (medium and heat up and down) after the cooking time, remove the cake and let cool.
Step 4:
Now we are going to prepare the mixture of three milks, for it we add in a bowl the evaporated milk, the single cream and the condensed milk, we mix very well until integrating.
Step 5:
Now it is the turn of our meringue, for this in a small saucepan add the sugar and then add water to cover (cover up to the level of sugar) and cook over medium high heat until a caramel texture (takes about 8 to 10 minutes).
Step 6:
In a bowl add the egg whites and with the help of an electric mixer, beat until the egg whites are whipped, then add the sugar and continue beating, finally add our hot syrup and beat for 4 more minutes (it should be a firm meringue, if you see that the texture is still a little loose, continue beating).
Step 7:
We take our cake and with the help of a fork we are going to go pricking all over, then add the mixture of three milks (covering very well all over the cake) and let it absorb all the mixture.
Step 8:
Introduce the meringue in a pastry bag and decorate our cake forming small peaks as I show you in the video, then we take our tres leches cake to the refrigerator for 2 hours.
Step 9:
Remove our tres leches cake from the refrigerator, serve a piece on a plate, sprinkle with cinnamon and enjoy!!!!
Tips To Prepare It
To prepare this tres leches cake, we use a mixer blender, if you don't have one, you can use an electric mixer.
If you do not have a pastry bag, you can add the meringue to the tres leches cake on top with the help of a spatula.
When preparing the meringue for the tres leches cake, you must beat until it has a firm texture, if you see that the texture is a little loose, keep beating.
