The “vaca frita” is one of the most popular dishes of Cuban cuisine, very similar to what is perhaps its most famous dish such as “ropa vieja”, but in this case, the meat is fried to get a firmer and crunchier texture, follow our step by step videos and learn how to prepare this delicious typical dish of Cuban gastronomy.
Ingredients
- 800 g (1.7 lbs) beef brisket
- 2 crushed garlic cloves
- 2 onions
- 1 green bell pepper
- Juice of 1 lime
- 4 cloves of garlic to cook the meat
- 2 bay leaves
- Black peppercorns to taste
- Salt to taste
- Olive oil
How To Make It
Step 1: We begin the preparation of our vaca frita, for this we fill a pot with water (approximately 3 liters) and we bring it to a boil, then we add salt, peppercorns, bay leaves, garlic and our meat to what begins to boil, we lower the heat and let it cook for 40 minutes or until our meat has softened and is ready to grill; after the minutes we remove our meat from the fire, let it cool a little and grill it as shown in the video.
Step 2: Then in a frying pan over medium heat and with a little olive oil add the onion, garlic and cook for 5 minutes, add the green bell pepper and cook for 5 minutes more, then add our meat and cook until we see that it has changed to a darker color and has a crispy texture, finally turn off the heat, add the lime juice, mix and serve.
Tips To Prepare It
You can substitute the lime juice for lemon juice and the olive oil for sunflower oil.
When you are going to fry the meat, bring the onion and the bell pepper to the ends of the pan to apply a more direct heat to the meat.
